TRACEABILITY
Traceability is a key component for managing food safety. Our tilapia are monitored every step of the way – hatched, raised, harvested, processed and shipped under controlled lots which enable us to track each individual fish’s journey from its inception to your grocer or favorite restaurant.

HARVEST Prior to each harvest, individual ponds undergo quality testing to ensure that every fish will meet our strict standards. Skilled craftsmen carefully harvest the fish on a daily basis. During live transport to our nearby processing facilities, the fish are treated as delicately and humanely as possible.
We take numerous measures, including the reduction of water temperature, to minimize stress and maintain quality throughout the process.
AT THE PLANT Throughout every stage, time and temperature are the key drivers for freshness and quality. Our fish arrive at the plant on a continuous basis throughout the day allowing us to maintain an even and expedited process flow. Our facilities benefit from the perfect combination of skilled craftspeople and state-of-the-art machinery.
Thanks to a finely-tuned process, expertly trained staff and healthy fish, it is not necessary for us to use preservatives, carbon monoxide or additives at any stage of processing.
Once cleaned, filleted and trimmed, the fish are packaged and placed in cold storage as they await transportation to the airport. Our proven cold chain management techniques maintain temperatures at optimum levels. Tropical Tilapia arrive fresh, never frozen, at its final destination.
OUR CERTIFICATIONS
We adhere to the industry’s strictest food safety requirements by complying with HAACP guidelines and, in addition, carrying ISO and SQF certifications. Our Aquamar and Produmar plants recently received BAP certification and the remainder of our farms and plants will be BAP certified by 2010.
